Tracy'S Apple Dumpling Cake
- 2 cups sugar
- 2 eggs
- 2 teaspoons vanilla
- 3/4 cup oil
- 3 cups peeled chopped apple
- 2 1/2 cups plain flour
- 1 teaspoon cinnamon
- 1 1/2 teaspoons bicarb
- 1/2 teaspoon salt
- Topping
- 1 cup brown sugar
- 1 1/2 tablespoons cornflour
- 3/4 cup water
- 1 tablespoon butter
- Cake - mix sugar, eggs, vanilla, oil and apple. Add in flour, cinnamon, bicarb and salt. Spoon into 25cm square tin and name at 160u0b0C for 50-60 minutes (top of cake is crusty). Carefully spoon topping over hot cake. Leave to cool.
- Topping - mix brown sugar and cornflour in saucepan. Slowly add in water to mix, then add butter. Heat and stir till it boils and thickens.
