Spinach And Potatoes
- 2 tablespoons vegetable oil if using bori;
- 3 tablespoons bori;
- 2 teaspoons vegetable oil;
- 1 teaspoon Indian five spice;
- 1/2 chopped onion;
- 1 potato diced;
- 1 teaspoon turmeric;
- 1 teaspoon cumin
- 1 teaspoon salt;
- 1/2 teaspoon sugar;
- 1/4 cup water;
- 1 package fresh spinach cut into large pieces
- If using bori: put the 2 tablespoons oil in pot. When hot, cover the bottom with the bori and cook on high for 1 minute. Turn bori out onto paper towel for adding later. Then add the 2 teaspoons oil to the pan, along with the five spice and onion. Cook about 4 minutes. Add the potato and cook another 3 minutes. Add bori if using, turmeric, cumin, salt and sugar. Cook 2 minutes. Add water and cover and cook 4 minutes. Add spinach and more water if needed. Cover and cook 4 more minutes.
