Coffee Rubbed Cheeseburgers
- COFFEE RUB
- 1 tbsp freshly ground coffee
- 2 stun (packed) golden brown sugar
- 2 tspn fresh ground black pepper
- 1/2 tspn fresh ground Coriander
- 1/2 tspn fresh dried Oregano
- 1/2 tspn fine sea salt
- BURGERS
- 2 lbs ground beef or 1 lb ground beef and 1 lb ground sirloin
- 8 slices smoked provolone, equally as good with cheddar
- 8 potato bread hamburger buns
- 8 slices red onion
- 8 slices tomato
- 8 slices apple wood smoked bacon (or thick bacon)
- 2 tbsp worcestshire sauce
- 3 garlic cloves minced
- 2 tspn grey poupon
- BBQ SAUCE
- 1 Tbsp Butter
- 1 Garlice Clove Minced
- 1 Cup Ketchup
- 1/3 Packed Golden Brown Sugar
- 1/3 Cup Worcestshire Sauce
- 1/4 Cup Fresh Lemon Juice
- 1 Chipotle Chili from called chipotle chili in adobo
- 1/4 tspn Ground Cayenne
- Melt butter in medium saucepan over medium heat. Add garlic; stir 30 seconds. Stir in ketchup and all remaining ingredients. Bring to a boil. Reduce heat to med-low simmer until reduced to 11/3 cups stirring occasionally about 15 minutes season with salt and pepper to taste.
- **Can be made 1 week ahead.
- For rub mix all ingredients in small bowl, rub can be made one week ahead.
- For burgers, mix ground beef with the mustard, garlic and worcestchire until completely mixed. Makes 8 patties. Cook bacon and set aside on drip dish to drain off all the fat and break in half. Using your thumb make a slight indentation in each burger in the center. Prepare BBQ heat to medium. Sprinkle 1 TBSPN of coffee rub on each side of the hamburger patty. Grill until slightly charred about 4 minutes, turn then place two bacon halves atop each burger. Cook for three (3) minutes then place cheese on top and melt, about one minute longer. Top with onions and tomatoes. Spoon a dollop of Texas BBQ sauce and serve the burger on the potato bun.
- Cooking Tip: Making an indentation in the center of the patty before cooking ensures a nice flat burger.
