Chocolate Peanut Butter Cheesecake

  1. Crust: mix graham crackers, butter, cinnamon, and 1/4 cup of sugar and press evenly into a 9 inch spring form pan.
  2. Cheesecake filling: mash cheese and flour together and then add remaining sugar, salt, and rum; cocoa powder beat with a spoon or a mixer on medium speed until smooth and fluffy. Add egg yolks one at a time beat well and stir in half and half and chips. In a separate bowl beat egg whites until stiff and fold into cheesecake mixture. Pour into spring form pan and bake at 350 for about an hour (until top splits and it somewhat firm) until set. Refrigerate until chilled (1-2 hours).
