Hungarian Chicken Paprika With Dumplings
- 2 tbl vegetable oil
- 4 boneless chicken brests
- 2 medium onions, chopped
- 2 green peppers, cut into 1/2" strips
- 2 tomatoes, chopped
- 2 cups chicken broth
- 4 tbl paprika
- 1 tsp salt
- 1/4 tsp fresh ground pepper
- 3 cups sour cream (24 oz)
- 2 clove garlic, finely chopped
- Dumplings
- 8 cups water
- 1 tsp salt
- 3 eggs well beaten
- 2 cups all purpose flour
- 2 tsp salt
- 1/2 cup water
- Cut green pepper into 1/2 strips.
- Chop onion and garlic.
- Chop tomato and set aside.
- Remove fat and skin from chicken.
- Heat oil in skillet until hot.
- Brown chicken on all sides, about 15 minutes. Remove chicken.
- Sautee onions and garlic until onions are tender. Drain fat.
- Add tomato, chicken broth, paprika, salt, and pepper.
- Add chicken. Heat to boiling; reduce heat.
- Cover and simmer 20 minutes.
- Add green pepper; cover & cook 10 - 15 minutes.
- Prepare Dumplings.
- Remove chicken to heated platter. Skim Fat. Stir in sour cream.
- Add dumplings and heat until hot.
- Prepare Dumplings.
- Boil 8 cups water & 1 tsp salt in a dutch oven.
- Mix eggs, 1/2 cup water, salt and flour.
- Drop dough by teaspoon in to boiling water.
- Cook uncovered for 10 minutes.
- Drain
