Somer (Summer) Pasta
- 1/2-1 lbs Shrimp (any size)
- 1 pkg Italian Sausage (I use turkey)
- 2 14.5oz cans italian seasoned diced tomatos
- 1 lg sweet onion diced
- 1 pkg mushrooms sliced (I use baby bella)
- 1 pkg baby spinach
- 1-2 heads of broccoli cut into bite size pieces
- 1 box pasta of your choice (I use whole wheat bow tie)
- 1-2 teaspoon red pepper flakes
- 1 tablespoon minced garlic
- 1 tablespoon of paprika (to taste)
- In a lg pot bring water to boiling with 4 tbsp extra virgin olive oil in water, put pasta in to boil to desired tenderness.(about 10 minutes) When the pasta is about 3 minutes from being done add in broccoli to boiling water to cook. In a lg skillet saute shrimp and italian sausage until 3/4 of the way done. Add in onions, mushrooms, & garlic until tender. Add tomatos and spices stir well and then add spinach just long enough to wilt a bit before removing it from heat.
- Drain pasta & broccoli and serve hot with the sauce and some grated parmesan cheese on top. Great summer dish!
