Orzo Basil Salad
- 2 cups orzo pasta
- 2 cups sugar snap peas or snow peas trimmed and cut on the diagonal.
- 1/3 cup olive oil
- 1 cup canned or frozen corn (thawed)
- 2 cups cherry tomatoes halved.
- 1 small red onion finely chopped
- 1 tsp lemon zest
- 1/4 cup fresh lemon juice
- 1/2 tsp each salt & pepper
- 1/2 cup chopped basil
- In a large pot ob boiling water cook orzo about 6 min add snow peas & cook 1 min until pasta and peas are tender. Drain well
- Tip pasta and peas into a large bowl, stir in 2 Tbsp olive oil onions basil and lemon zest. In a small jar with lid put remaining oil, lemon juice salt & pepper. Shake well to combine.
- To transport spoon salad into a 12 cup container. Carry salad and dressing separately.
- Just before serving tip salad into glass bown, shake dressing and add to salad. Stir to combine.
