  1. The Ceviche:
  2. 8 Diver scallops, cut into a 1/4 inch dice
  3. 1 Small red onion, small dice
  4. 2 Tomatoes, peeled, seeded and cut into small dice
  5. 1/4 Jalapeno, minced
  6. 2 tablespoons Mint, chiffonade
  7. 2 tablespoons Basil, chiffonade
  8. 1/4 cup Extra virgin olive oil
  9. 2 tablespoons Lime juice
  10. 2 tablespoons Lemon juice
  11. Fine sea salt to taste
  12. Freshly ground white pepper to taste
  13. Espelette pepper to taste
  14. The Soy Ginger Vinaigrette:
  15. Approximately 1/2 Cup
  16. 1-tablespoon Finely diced ginger
  17. 2 tablespoons Finely diced shallot
  18. 1-tablespoon Oyster sauce
  19. 2 tablespoons Sherry vinegar
  20. 4 tablespoons Canola oil
  21. 1-tablespoon Soy sauce
  22. 1/2 teaspoon Fresh limejuice
  23. Small pinch cayenne
