Grilled Shrimp Skewers With Mango & Bell Peppers

  1. In a medium bowl, combine olive oil, lime juice, sherry, garlic, bourbon, and soy sauce.
  2. Add shrimp and refrigerate 1 hour.
  3. Soak 10 wooden skewers in warm water for 30 minutes, drain.
  4. Thread each skewer in this order: Shrimp, mango square, green pepper square, red pepper square, shrimp, mango square, green pepper square, red pepper square, and shrimp. Repeat with remaining 9 skewers.
  5. Place skewers on a grill 4 to 6 inches above hot coals for 3 minutes. Turn skewers and grill an additional 3 minutes, or until shrimp are just opaque.
