Sweet And Spicy Couscous

  1. a. Bring 2 cups of broth to boil in large saucepot. Stir in couscous.
  2. b. Remove from heat and cover. Allow couscous to cool. Fluff lightly in large serving bowl.
  3. c. Stir in grapes, olives, nuts, apricots, green onions, parsley and mint.
  4. d. In separate bowl, whisk together remaining ingredients. Add to coucous mixture and stir gently.
  5. Allow flavors to meld by allowing couscous too cool to room temperature (approx 20 minutes).
