Sweet And Spicy Couscous
- 2 1/2 cup broth, chicken or vegetable
- 2 cups couscous (quick cooking)
- 2 cups seedless grapes (red or green)
- 1 jar kalamata olive halves (pitted)
- 1 cup pine nuts (or almond), toasted
- 1 cup apricots, dried and sliced
- 1 cup green onions, sliced
- 4 tbs fresh parsley, snipped
- 4 tbs fresh mint, snipped
- 1/2 cup olive oil
- 1/2 cup fresh lemon juice
- 1/2 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 tsp cayenne pepper
- a. Bring 2 cups of broth to boil in large saucepot. Stir in couscous.
- b. Remove from heat and cover. Allow couscous to cool. Fluff lightly in large serving bowl.
- c. Stir in grapes, olives, nuts, apricots, green onions, parsley and mint.
- d. In separate bowl, whisk together remaining ingredients. Add to coucous mixture and stir gently.
- Allow flavors to meld by allowing couscous too cool to room temperature (approx 20 minutes).
