Curried Chicken Salad
- Curried Dressing
- 1 egg
- 1 cup corn oil
- 1/4 cup vinegar
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon minced garlic
- 1/2 teaspoon sugar
- 1/2 teaspoon turmeric
- 1/2 teaspoon coriander
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon dry mustard
- 1/4 teaspoon cardamom
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground cumin
- 1/8 teaspoon cayenne pepper
- Salad
- 2 pounds boneless chicken breast, cooked and cubed
- 1 1/4 cups celery, sliced 1/4" thick
- 2 cups pineapple, cubed
- 1/2 cup raisins
- 3/4 cup macadamia nuts
- 1/2 head romaine lettuce
- 1.thiz egg in food processor. Gradually add corn oil. Add remaining dressing ingredients.
- 2.tombine salad ingredients with dressing. Serve over lettuce.
