Spicy Baked Rigatoni
- 2 T olive oil
- 2 each sweet and hot italian sausages, casings removed
- 12 oz rigatoni pasta
- 2 C prepared marinara sauce
- 2 med ripe tomatoes diced
- 1/2 C fresh basil leaves torn
- 1 t dried oregano
- 1/4 t red pepper flakes
- 12 oz mozzarella - 6 slices and dice the rest
- sale and ground black pepper
- preheat oven to 350, lightly oil 9 x 13 x 2 baking dish. heat olive oil in heavy pot on med/low, add sausage and cook, breaking into clumps til brown. use slotted spoon to remove to a large bowl. Cook pasta in boiling saled water until just tender. Drain and add to sausages with marinara sauce, tomatos, basil, oregano, pepper flakes, diced mozzarella, salt and pepper toss well. transfer to baking dish and cover with mozzarella slices. Bake til cheese melted and pasta heated, aabout 20 min.
