Easy Fruitcake
- 1 c. seedless raisins
- 1 c. seeded raisins
- 1 lb. can cling peaches, drained and chopped
- 1 c. shortening
- 1 c. firmly packed brown sugar
- 1/2 c. orange juice
- 2 (1 lb.) jars candied mixed fruit
- 2 c. chopped walnuts
- 4 eggs, beaten
- 2 1/2 c. sifted flour
- 1 tsp. baking powder
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. ground cloves
- Grease 2 (9 x 5 x 3-inch) loaf pans.
- Combine raisins, peaches, shortening, sugar and orange juice in a saucepan and heat just to boiling.
- Remove from heat; pour into large bowl.
- Cool.
- Add candies, fruits and nuts to cooled mixture.
- Stir in beaten eggs. Sift flour, baking powder, salt, cinnamon, nutmeg and cloves together.
- Beat into fruit-nut mixture.
- Spoon batter into prepared pans.
- Bake at 300u0b0 for 2 hours or until cakes test done.
- Decorate to your liking.
- Makes 2 cakes.
