Betsy'S Whole Wheat Double Chip Cookies

  1. Preheat oven to 375.
  2. Put butter or margarine in a large microwave-safe mixing bowl and heat until partially melted (20-30 seconds on high). Add sugars and mix until smooth. Add vanilla, egg and baking soda. Stir in flour until blended. Mix in chips.
  3. Using small ice cream scoop, drop mixture 2 inches apart on ungreased baking sheet. Bake 10 minutes or until edges are golden brown. Remove cookies to wire racks and cool.
