Betsy'S Whole Wheat Double Chip Cookies
- 1 cup (2 sticks) butter or margarine
- 3/4 cup granulated light brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 teaspoon baking soda
- 2 cups stone-ground whole wheat flour
- 1 cup semi-sweet chocolate chips
- 1 cup white chocolate chips
- Preheat oven to 375.
- Put butter or margarine in a large microwave-safe mixing bowl and heat until partially melted (20-30 seconds on high). Add sugars and mix until smooth. Add vanilla, egg and baking soda. Stir in flour until blended. Mix in chips.
- Using small ice cream scoop, drop mixture 2 inches apart on ungreased baking sheet. Bake 10 minutes or until edges are golden brown. Remove cookies to wire racks and cool.
