Simit Kebap
- 1/2 cup shelled pistachios
- 1/4 cup roughly chopped parsley
- 1/4 cup roughly chopped mint
- 1 tsp crushed red chili flakes
- 1/2 tsp ground allspice
- 6 cloves of garlic, peeled
- 2 scallions, roughly chopped
- 1/2 small yellow onion, roughly chopped
- 1 lb ground lamb
- 1/4 cup fine bulgur, soaked in warm water for 10 mins and drained
- Salt and pepper, to taste.
- 9 metal skewers
- Olive oil, sumac and yogurt for serving
- Puree pistachios and 1/4 cup water until smooth.Add parsley, mint, chili, allspice, garlic, scallions and onions until almost smooth. Transfer to bowl. Add lamb, bulgur, salt and pepper and mix to combine. Form onto skewers and refrigerate until firm, about 1 hour. Grill.
