Earth Grains Bread
- 1 1/2 c. evaporated milk
- 3/4 c. water
- 2 pkg. dry yeast
- 2/3 c. firmly packed brown sugar
- 1/2 c. quick cooking oats
- 2 tsp. salt
- 1 c. whole wheat flour
- 1 c. rye flour
- 3 to 3 1/2 c. all-purpose flour
- evaporated milk
- 1/4 c. chopped, unsalted sunflower seeds (optional)
- Combine milk
- and water.
- Heat to 105u0b0 to 115u0b0.
- Put in a large bowl. Dissolve yeast in warm mixture. Add brown sugar, oats, salt,

- wheat
- flour,
- rye
- flour, 1 cup flour and sunflower seeds.
- Stir vigorously 1 minute. Stir in 1 1/2 cups more flour totake
- a stiff dough.
- Knead on floured surface using rest of flour until smooth and elastic, about 8 minutes. Place in buttered bowl and
- butter top of dough. Cover and let rise in warm place until
- double

- bulk.
- Punch down.
- Form into 2 loaves.tlace intreased
- loaf pans. Brush with milk. Let rise until double in bulk.
- Bake
- in slow oven at 325u0b0 for 25 to 30 minutes or until it sounds hollow when tapped.
