Sausage Sliders With Corn Chutney L Pair With Shiraz
- Sliders:
- 1 lb ground beef
- 3/4 lb smoked sausage, ground or finely diced
- Salt/Pepper to taste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon olive oil
- 8 potato slider rolls
- 8 slices smoked mozzarella cheese
- Corn Chutney:
- 1/2 small onion, roughly chopped
- 1 clove garlic
- 1 teaspoon olive oil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 1 small tomato, diced
- 1 ear corn, raw
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar
- 1 tablespoon honey
- Salt/Pepper to taste
- 1. Mix ground beef, sausage, Worcestershire and salt/pepper together in a large bowl. Form 8 small sliders to match the size of the slider rolls. Poke a small divot in the center of each slider to ensure even cooking.
- 2. Heat olive oil in cast iron skillet over medium-high heat. Add sliders, in batches and cook to medium. Top with cheese slice during last minute of cooking to melt. Keep warm in oven while cooking remaining batches.
- 3. Add onion and garlic to a food processor and blend until very finely diced. Add mixture to 1 tablespoon olive oil heating up in a small saucepan. Cook until all moisture has evaporated.
- 4. Add paprika and red pepper flakes, stir and cook for one minute to "wake up" the spices.
- 5. Add remaining ingredients and simmer over medium heat until all ingredients have combined and sauce has thicken to a jam like consistency.
