Sauteed Prawns With Curried Couscous
- 1 pound (16 to 20 per pound) large prawns, peeled & deviened.
- Cracked black pepper to taste
- Papaya Cumin Cilantro Sauce:
- 1 large ripe papaya
- 2 ounces lime juice
- 2 ounces orange juice
- 1 ounce water
- 1 tsp ground cumin
- 1/2 red bell pepper, minced
- 1/4 bunch cilantro, chopped
- Curried Couscous:
- 2 cups dried couscous
- 2 cups water
- 1 tsp curry powder
- Cracked black pepper to taste
- Curried Couscous:
- 1) Bring the 2 cups of water and curry powder to a boil.
- 2) Add couscous, cover and remove from heat.
- 3) In approximately eight minutes the couscous will be hydrated, cooked and firm.
- Papaya Cumin Cilantro Sauce:
- 1) Puree papaya meat, lime juice, water and cumin in a blender until smooth and silky.
- 2) Pour into a bowl and stir in cilantro, cumin, red pepper and cracked pepper to taste.s
- Prawns:
- 1) Season prawns with cracked pepper and sear both sides in a non-stick pan until just underdone.
- 2) Fluff couscous with a fork and spoon some on a plate. Pour sauce around and top with sauteed prawns.
