Coconut Turkey Curry

  1. Cook 1 cup rice in 2 cups of chicken broth.
  2. Boil coconut milk with 1 cup broth, salt, chili sauce, hoisin sauce and brown sugar.
  3. Add turkey and frozen edamame. Cook 5 min.
  4. Add snow peas, string beans, spinach, carrots, bell pepper, garlic, ginger, basil, pineapple, and mushrooms. Cook 5 min.
  5. Spoon rice into a bowl. Top with turkey/vegetable mixture. Top with chopped cilantro, peanuts, lime juice and zest, and hoisin sauce.
