Bernaie'S Nanaimo Bars
- BASE:
- 2 squares semi-sweet chocolate
- 1/2 C. butter (at room temp.)
- 2 Tbsp. sugar
- 1 tsp. vanilla extract
- 1 egg
- 2 C. graham wafer crumbs
- 1 C. flaked coconut
- 1/2 C. chopped walnuts
- FILLING:
- 2 Tbsp. custard powder
- 3 Tbsp. milk
- 1/4 C. butter (at room temp.)
- 2 C. icing sugar
- GLAZE:
- 4 squares semi-sweet chocolate
- 1 Tbsp. butter
- BASE:
- 1. In a double boiler, melt butter and chocolate (over hot water, but never touching the hot water).
- 2. Once melted, add sugar, vanilla and egg; mix well.
- 3. Add graham wafer crumbs, coconut & walnuts; mix well.
- 4. Press into 9" square pan. Chill.
- FILLING:
- 1. Combine custard powder and milk. Add butter.
- 2. Beat in icing sugar until smooth.
- 3. Spread over the chilled base, & chill for 15 more minutes.
- GLAZE:
- 1. In a double boiler, melt the chocolate & butter over hot water.
- 2. Spread over the already chilled base and custard layer. Chill. Cut into bars.
- Freezes and thaws well.
