Giovanni'S Sausage Pasta Sauce
- 12 Italian Sausages 6 hot and 6 mild
- i large onion chopped
- 8 minced garlic cloves
- 1/4 cup olive oil
- 1 cup loosely packed Basil leaves
- 2 tablespoons salt
- 1 tsp pepper
- 2-28 ounce tins tomatoes, crushed
- 1 1/2 cans water
- 1 5.5 ounce can tomato paste
- 1 pound penne or big shell rigatoni
- Place olive oil in large stock pot, to cover bottom to about 1/4 inch. Remove sausage meat from casings and place in pot. Add onion, garlic, basil and salt and pepper. Cook over moderate heat, stirring frequently until meat is browned. Add tomatoes, water and tomato paste. Cook for about 1/2 hour, or until sauce is more red than orange.
- Boil pasta in boiling salted water for 10 to 12 minutes
- Drain and serve with sauce
