Seafood Feta Casserole
- 2 tablespoons Olive Oil
- 1 pound Onions
- 2 cloves Garlic
- 1/2 cup White Wine
- 3 tablespoons Parsley
- 1/4 teaspoon Pepper
- 1 pound White Fish
- 1/4 pound Shrimp
- 1/2 pound Feta Cheese
- 3/4 teaspoon Oregano
- 1 can Whole Plum Tomato's
- Chop onions and garlic. Warm over medium high heat with olive oil and saute onions until limp.
- Add oregano and stir for 30 seconds.
- Add garlic and stir until fragrant.
- Add white wine, stir and boil until almost evaporated.
- Add tomatoes and bring to boil and cook for 5 - 7 minutes to soften them.
- Break up the tomatoes and then cover and simmer for at least 45 minutes. Liquid should be almost evaporated.
- Turn Oven on to 400 degrees.
- Add white fish and cook for10 minutes until almost cooked through. Stir to incorporate.
- Add shrimp and cook 10 minutes.
- Add feta cheese on top with parsley and broil until melted.
- Let sit for 5 minutes to cook through.
