Seafood Feta Casserole

  1. Chop onions and garlic. Warm over medium high heat with olive oil and saute onions until limp.
  2. Add oregano and stir for 30 seconds.
  3. Add garlic and stir until fragrant.
  4. Add white wine, stir and boil until almost evaporated.
  5. Add tomatoes and bring to boil and cook for 5 - 7 minutes to soften them.
  6. Break up the tomatoes and then cover and simmer for at least 45 minutes. Liquid should be almost evaporated.
  7. Turn Oven on to 400 degrees.
  8. Add white fish and cook for10 minutes until almost cooked through. Stir to incorporate.
  9. Add shrimp and cook 10 minutes.
  10. Add feta cheese on top with parsley and broil until melted.
  11. Let sit for 5 minutes to cook through.
