Red Beans And Rice
- 6 oz. low-fat smoked sausage, sliced
- 1 c. chopped onion
- 3/4 c. chopped green pepper
- 1 clove garlic, minced
- 3 (16 oz.) cans red beans, drained
- 1 (14 1/2 oz.) can no salt added stewed tomatoes, chopped (undrained)
- 1 1/2 c. water
- 1 (6 oz.) can no salt added tomato paste
- 1/4 tsp. dried oregano
- 1/4 tsp. dried thyme
- 1/4 tsp. hot sauce (Tabasco sauce)
- 1 bay leaf
- 4 c. cooked long grain rice
- Coat Dutch oven with cooking spray.
- Place over medium heat until hot.
- Add sausage and next 3 ingredients.
- Saute until tender.
- Add beans and next 7 ingredients.
- Bring to boil.
- Cover and reduce heat.
- Simmer 20 minutes or until heated.
- Remove and discard bay leaf.
- Serve over rice.
- Makes 8 servings.
- Each serving contains 310 calories and 1.2 g fat.
