Gingered Broccoli With Toasted Sesame Seeds
- 2 teaspoons sesame seeds
- 4 cups broccoli flowerets
- 1 small sweet red pepper, cut into 1 inch by 1/4 inch strips
- Vegetable cooking spray
- 1 tablespoon gingerroot, peeled and minced
- 1 clove garlic, minced
- 1/2 teaspoon dark sesame oil
- 1/4 teaspoon salt
- 1. Place sesame seeds in a small, nonstick skillet. Cook over medium heat, stirring constantly, for one to two minutes or until seeds are golden. Remove from heat.
- 2. Cook broccoli in boiling water for two to four minutes, then add the red pepper and cook for another 30 seconds. Drain and reserve 1/3 cup of the liquid.
- 3. Coat a large nonstick skillet with cooking spray, and heat over medium heat until hot. Add the ginger root and garlic, and saute for 30 seconds. Add the reserved liquid, and bring to a boil. Add the broccoli mixture, sesame oil, and salt, and toss gently.
- 4. Transfer to a serving platter, and sprinkle with toasted sesame seeds. Serve immediately.
