Beet Cake

• 1 cup oil
• 1/2 cup margarine, melted
• 3 eggs
• 2 cups sugar
• 2 1/2 cups flour
• 2 tsp. cinnamon
• 2 tsp. baking soda
• 2 tsp. baking powder
• 1 tsp. salt
• 1 cup drained crushed pineapple
• 1 cup diced beets (undrained)
• 1/2 cup cottage cheese
• 1 cup chopped walnuts
• 1 cup coconut
• 2 tsp. vanilla

1. Melt together oil and margarine. beat eggs and sugar; add oil mixture and beat well. Add flour, cinnamon, baking soda, baking powder and salt. Fold in pineapple, beets, cottage cheese, walnuts, coconut, and vanilla. Bake in greased and floured 9 X 14 pan at 350 degrees for 45 - 50 minutes, or until cake tests done with toothpick. Frost with cream cheese frosting.
