Lime Jello Salad
- 1 3 oz. box lime jello
- 15 large marshmallows
- 1 c. crushed pineapple (drained and reserve juice)
- 1/2 pt. whipping cream, whipped
- 1/2 c. boiling water
- 1/2 c. pineapple juice (reserved from crushed pineapple)
- 1/2 pt. small curd cottage cheese
- Dissolve jello in water.
- Add marshmallows and place over low heat, stirring until completely dissolved.
- Add pineapple juice and let set until partially jelled.
- Add pineapple, cottage cheese and whipped cream.
- Stir as little as possible to mix and pour into mold.
- Chill until firm.
- You can add 1/2 cup chopped pecans to this salad if you like them (I think it really makes it better). If you don't want to put this in a mold, you can pour it into a 9x13x2 pan and cut into squares to serve.
- This is another good company dish.
- It can be done in advance and forgotten until serving time.
