Fabulous Lower- Fat Mexican Casserole
- 2 lbs. ground turkey
- 1 large red onion, chopped
- 3 tsp. garlic salt
- 3 tsp. chile powder
- 1 cup ketchup
- 2 10oz. can Rotel tomatoes w/ green chilies
- 8 oz. Baked Tostitos, crushed
- 16 oz. low- fat sour cream
- 6 oz. low-fat cream cheese, softened in microwave
- 2 small cans green chilies
- 4 cups 2% Monterey jack cheese, grated
- Brown turkey and drain
- Add next 5 ingredients and simmer 10 mins.
- In a separate bowl, combine sour cream, cream cheese, and chilies.
- In a 13x9 pan, layer 1/2 chips, 1/2 meat, 1/2 sour cream mixture, and 1/2 cheese. Repeat.
- Bake uncovered 45 minutes at 350 degrees.
