Narrin'S Pork Chops
- 3 pounds pork shoulder, trimmed of extra fat and sliced thinly (butchers like D.W. Whitaker will do it for you)
- 3 tablespoons barbecue spice rub (preferably Narrin's Honey Barbecue brand)
- 1/2 cup all-purpose flour
- 1/4 cup canola oil
- 1 pound mushrooms, sliced
- 10 ounces water
- 1/4 cup soy sauce
- Preliminaries: Mix spice rub with flour in paper or plastic bag and set aside. Heat oil in large nonstick pan over medium heat.
- Saute chops: Coat chops on both sides and shake off extra flour. As each is coated, place enough chops in hot oil in pan without crowding. Brown both sides. Remove chops and keep warm until all are done browning. Drain excess oil and return chops to the pan. Add mushrooms and stir to incorporate, 1-3 minutes.
- Make sauce: Pour soy and wat
