Wonderful Pea Soup
- 1 lb dried split green peas
- 5 cups chix broth
- 5 cups water
- 1 meaty ham or 2 smoked ham hocks
- 2 ribs celery, leaves included
- 3 T italian parsley
- 1/2 t taragon
- 4 T (1/2 stick) unsalted butter
- 1 cup diced peeled carrots
- 1 cup diced onion
- 1 leek (white part only) rinsed and sliced
- 1 cup slivered spinach leaves
- 2 T dry sherry
- 1/2 t pepper
- 1. Rinse pease in strainer and combine w stock and water in dutch oven. Bring to boil
- 2. Add ham bone, celery, 1 TBL of parsley and tarragon. Reduce heat to med low and simmer, partially covered, stirring occasionally for 45 min.
- 3. Melt butter in large frying pan over med low heat. Add carrots, onion, leek. Cook til veggies re wilted, 10 min. Add to soup pot along with spinach. Simmer, partially covered, 30 min.
- 4. Remove soup from heat. Remove ham bone an shred meat, removing excess fat. Return meat to soup.
- 5. Add sherry, pepper and remaining 2 T of parsley. Heat and serve. Yum.
