Peanut Butter Pork
- 3 lbs. boneless pork shoulder, cut into 1x1 inch cubes.
- 1/2 cup chunky peanut butter
- 1/4 soy sauce
- juice of one lime plus zest
- 1/2 cup coconut milk
- 1/2 onion, grated
- 1/2 cup cilantro, chopped
- 1 tsp. sambal or chili sauce similar. Dried chili flakes work also.
- put all ingredients besides pork into food processor and mix until peanut butter is incorporated. Put pork in large freezer bag and add marinade. Let rest in fridge at least 1 1/2 hours or overnight is better.
- Soak 8 inch bamboo skewers in water one hour. This is messy, but string 4 pieces pork on each skewer with about 1/4 inch separating pork squares.
- Heat grill to HIGH and fold about a 3 inch strip of foil onto grill at the front to guard your exposed skewers. This should keep them from burning off.
- Grill kabobs 3 minutes on each side, check for doneness. If the meat is still a bit mushy, it should cook just a bit more. Let it stay on the grill another minute or two.
- With remaining marinade, add 1 tsp soy, and one more tsp sambal or to taste(optional). Heat up to 145 degress on side burner at low temp. This makes an excellent dipping sauce with a little added spice
