Grandma'S Cinnamon Rolls

  1. Combine Warm Water with Honey and Yeast. Water must be between 95 - 115 F. Set aside to bubble
  2. Scald Milk: Heat on medium in a heavy bottomed pan stirring constantly. Take off heat at ~ 180 F when bubbles form. Cool to 115 F.
  3. Immediately add butter and sugar to scalded milk, mix well
  4. Add 3 beaten eggs and salt, beat well
  5. Add 3 cups of flour to the mixture and combine
  6. Add yeast mixture, mix well
  7. Add 2 cups of flour and beat well. Add 6th cup of flour if necessary (should be firm but a bit sticky)
  8. Let the dough rise in a warm area until double in volume
  9. Punch Down
  10. Let dough rise again
  11. Pat clean area with butter to work with the dough
  12. Shape dough in circule 18-20 inches in diameter
  13. Put melted butter on top of dough
  14. Cover buttered dough with brown sugar (cover all of the dough)
  15. Liberally sprinkle cinnamon on dough
  16. Roll up like a jelly roll
  17. Grease 2 13x9 in pans
  18. Slice dough roll in 1/3 - 1/2 in slices
  19. Place slices in pans, cut side down
  20. Let rise until double in volume
  21. Bake in preheated 350 F oven 20-25 min, until top is brown
  22. Combine Powered sugar and Milk to frost.
  23. Enjoy!
