Grandma'S Cinnamon Rolls
- 2 packets Dry Yeast
- 1/2 teaspoon Honey
- 3/4 cup Warm Water
- 1 cup Milk
- 1/4 pound Butter
- 1/3 cup Sugar
- 3 Eggs
- 1 teaspoon Salt
- 6 cups Flour
- 2 tablespoon Melted Butter
- 1 cup Brown Sugar
- 3 tablespoons Cinnamon
- 1 cup Powdered sugar
- 2 tablespoon Milk
- Combine Warm Water with Honey and Yeast. Water must be between 95 - 115 F. Set aside to bubble
- Scald Milk: Heat on medium in a heavy bottomed pan stirring constantly. Take off heat at ~ 180 F when bubbles form. Cool to 115 F.
- Immediately add butter and sugar to scalded milk, mix well
- Add 3 beaten eggs and salt, beat well
- Add 3 cups of flour to the mixture and combine
- Add yeast mixture, mix well
- Add 2 cups of flour and beat well. Add 6th cup of flour if necessary (should be firm but a bit sticky)
- Let the dough rise in a warm area until double in volume
- Punch Down
- Let dough rise again
- Pat clean area with butter to work with the dough
- Shape dough in circule 18-20 inches in diameter
- Put melted butter on top of dough
- Cover buttered dough with brown sugar (cover all of the dough)
- Liberally sprinkle cinnamon on dough
- Roll up like a jelly roll
- Grease 2 13x9 in pans
- Slice dough roll in 1/3 - 1/2 in slices
- Place slices in pans, cut side down
- Let rise until double in volume
- Bake in preheated 350 F oven 20-25 min, until top is brown
- Combine Powered sugar and Milk to frost.
