Grilled Lemon Pepper Chicken Salad
- 5 tablespoons olive oil
- 3 tablespoons lemon juice
- 1/2 teaspoon tabasco sauce
- 1/2 teaspoon thyme
- 3/4 pound chicken breast half without skin
- 1 medium red onion
- 1/2 head romaine lettuce
- 1/2 cup feta cheese
- 1.tlatten chicken breast halves to no more than 1/2 inch thick
- 2.thisk olive oil, lemon juice, pepper sauce and thyme. Season with salt and pepper. With 2 tablespoons of the marindate, marinate chicken breasts for at least 30 minutes (and no more than 4 hours)
- 3.tarm remaining dressing
- 4.trill chicken and onion slices, ~4 minutes per side.
- 5.teparate onion rings, slice chicken. Arrange over lettuce and sprinkle with feta
