Broc-Aroni And Cheese
- 8 oz. elbow macaroni
- 1 c. chopped broccoli (fresh) or cooked frozen
- 4 Tbsp. fat-free margarine
- 2 Tbsp. flour
- 2 c. skim milk
- 1 c. fat-free Cheddar cheese
- 1 c. fat-free Mozzarella cheese
- 1/2 tsp. salt
- 1/2 tsp. cayenne pepper
- 1/2 c. seasoned bread crumbs
- Cook macaroni as directed. Steam fresh broccoli 6 minutes or cook frozen as directed.
- In saucepan, melt margarine.
- Stir in flour until thick and smooth. Remove from heat.
- Add milk, salt, pepper, all the Mozzarella and 1/2 of the Cheddar.
- Stir well until cheese melts.
- Add macaroni, crumbs, remaining Cheddar and broccoli; mix thoroughly.
- Turn into an 8 x 8-inch shallow baking dish sprayed with nonstick spray. Bake at 375u0b0 until bubbly, 10 to 15 minutes.
