Pecan Tassie Bars
- For the Crust
- 2 1/2 cups all-puropose flour
- 1/2 cup granulated sugar
- 1/2 tsp salt
- 1/2 lb cold, unsalted butter, diced
- For the Filling
- 4 eggs, beaten
- 1 1/2 cups dark Karo Syrup
- 1 1/2 cups granulated sugar
- 3 Tbls butter, melted
- 1 1/2 tsp vanilla
- 2 1/2 cups pecans, coarsely chopped
- Preheat oven to 350 degrees F.
- 10 x 15 Pan with 2" sides - Coated with non-stick spray
- For the Crust - Combine the flour, sugar, salt and butter into fine crumbs using a food processor or pastry blender. Mixture may look dry. Press firmly into prepared pan.
- Bake 20 minutes at 350 degrees or until golden brown.
- For the Filling - Combine all the ingredients and pour over the hot crust, spreading evenly.
- Bake 25 minutes at 350 dgrees.
- Cool on wire rack.
- Approximately 15 minutes after coming out of the oven, run a sharp knife around the edge to release bars from side of pan. Cool completely before cutting into squares.
