Baked Potatoes Filled With Vegetables
- 4 Irish potatoes
- 2 Tbsp. butter, melted
- 2 Tbsp. flour
- 1 c. milk
- 1/4 tsp. salt
- 1/2 c. grated cheese
- 1/2 c. cooked peas
- 1/2 c. cooked chopped carrots
- 1/4 c. diced green peppers
- paprika
- 3 c. bread crumbs
- Bake potatoes until done.
- Melt butter; stir in flour and milk.
- Add salt, cheese, peas, carrots and peppers.
- Cut the potatoes lengthwise into halves.
- Remove the pulp without breaking the skin.
- Mash the pulp and add it to the vegetable mixture. Season with paprika.
- Fill the shells with mixture.
- Top with bread crumbs browned in butter.
- Place the potatoes in oven at 400u0b0 until the tops are brown.
- Goes great with lamb chops or ham.
