Grilled Tuna With Spinach Tomatoes And Capers
- 1/2 c butter
- 4 cups fresh spinach leaves (5 oz)
- 1 c thin green beans blanched
- 1/2 c chopped tomatoes
- 1/2 c drained canned black beans
- 1/4 c chopped fresh cilantro
- 2T fresh lemon juice
- 1 T drained capers
- 4 - 6oz tuna steaks
- olive oil
- 1 T chopped fresh thyme
- 1 1/2 tsp coarsely ground black pepper
- Prepare barbecue (medium high heat) or preheat broiler. Cook butter in heavy large skillet over med high heat until beginning to brown, about 3 min. Remove from heat. Add spinach and next 6 ingredients. Toss until just heated through. Season with salt and pepper. Keep warm.
- Brush tuna with oil; sprinkle with thyme, pepper, and salt. Grill until just opaque in center (about 3 min) per side. Cut into 1/2 in thick slices. Mound spinach mix in center of plates and top with tuna slices.
