Steak Tagliata With Peppers And Zucchini
- 3 TBS. extra virgin olive oil
- 1 clove garlic, minced
- 1 small yellow onion, diced
- 2 medium zucchini, diced
- 1 yellow and 1 red bell pepper, diced
- 2 TBS chopped lemon pulp
- 1 tsp. grated lemon peel
- 3-4 TBS parsley
- 1/4 ts. salt
- 1/8 pepper
- 1 lb. sirloin or rib eye steak, 1 inch thick
- In 12 inch skillet, heat 3 TBS olive oil over medium heat. Saute garlic for 30 seconds and then add onions. Saute another 5 min.. Add zucchini and peppers and cook, stirring occasionally.
- Add lemon pulp, lemon peel, parsley, salt, black pepper, and transfer to a bowl. Cover bowl to keep veg. warm.
- Season steaks, if desired with salt and peper. In same skillet, cook steaks 4 - 8 min. or until desired doneness, turning once. Let steaks stand 5 minutes, then slice and serve with veg. salsa.
