Chicken With Grapes
- skinless, boneless chicken breasts1 and a half pounds?
- 1 T butter
- 1 T olive oil
- 1/4 cup made up of some combination of:
- juice of half a lemon
- white wine
- fruit vinegar Balsamic raspberry is especially nice
- 1 cup or more whole seedless red grapes
- 1 Slice the chicken breasts crosswise and then cut across the slices to make bit-sized pieces.
- 2.Melt the butter with the oil in a 12-inch skillet.
- 3.Over low heat lightly saute the chicken pieces in batches if necessary, seasoned lightly with salt and pepper, until they are white. You do not want them to brown at this point.
- 4. Cover the pan, turn off the heat, and let the chicken sit for a few minutes. This gives the chicken a lovely texture.
- 5. Rinse the grapes and let drain, and assemble your lemon and/or white wine and/or fruit vinegar.
- 6. Remove the chicken pieces but not the fat from the pan, and keep them warm and covered.
- 7. Turn up the heat and reduce the fat with your lemon juice/ wine/ vinegar mixture.
- 8. Before it is syrupy, add the grapes and cook until they are heated through.
- 9. Return the chicken pieces to the pan and cook, turning frequently, until they are cooked through and have acquired a glaze.
