Sharon'S Famous Lemon- Herb Chicken Wings
- 1-large family size package Tyson/Perdue Chicken wings, rinsed well
- 1-1/4 cup Kosher salt
- MARINADE:
- 2-3, cloves garlic, finely chopped
- 4-Tbs Olive Oil
- 2-Lemons
- 3-Tbs freshly chopped Tarragon
- 1-Tbs freshly chopped Chives
- 1-Tbs freshly chopped Lemon Thyme
- dash of Ground Double Superfine Mustard
- Kosher salt and fresh ground pepper, to taste
- Prepare the marinade about an hour before you wish to use it. There is no need to refridgerate and actully works better if left on the counter.
- Combine all ingredients listed above for marinade, you can substitute dried herbs for fresh. Adjust amounts accordingly as dried herbs are not as strong as fresh.
- Light grill and heat to 400 degrees F.
- Before you are ready to grill, rinse chicken wings with the quater cup of kosher salt. Pat dry and put on a baking sheet. The chicken wings should be folded so that they form a triangle. Take the wing tip and tuck it back behind the "drumstick" part. Salt and pepper.
- Place chicken on hot grill and let cook 5 min or until they look browned. Turn over and start to baste browned side with marinade. Lower grill to medium heat, 300-350 F. When the other side is done, flip and continue basting. Chicken wings are done when both sides have a nice dark caramel color and have been basted a couple of times.
