No Crust Spinach Quiche(Low Carb)

  1. Saute the first 5 ingredients in oil. Drain and cool. Combine eggs and Ricotta cheese and beat until blended. Add veggies and all other ingredients.
  2. Stir until blended. Pour mixture into lightly greased 10-inch deep dish quiche pan. Bake at 350u0b0 for 1 hour. Let stand 10 minutes before cutting.
