No Crust Spinach Quiche(Low Carb)
- 3/4 c. chopped green pepper
- 3/4 c. chopped onion
- 1 1/2 c. sliced mushrooms
- 1 1/2 c. sliced zucchini
- 1 1/2 tsp. minced garlic
- 3 Tbsp. oil
- 1 (10 oz.) pkg. chopped spinach, thawed and drained
- 1 (7 oz.) pkg. Feta cheese
- 1 1/2 tsp. thyme
- 1 Tbsp. parsley
- 1/4 tsp. pepper
- 5 eggs, beaten
- 1 (16 oz.) Ricotta cheese
- 3/4 tsp. salt
- Saute the first 5 ingredients in oil. Drain and cool. Combine eggs and Ricotta cheese and beat until blended. Add veggies and all other ingredients.
- Stir until blended. Pour mixture into lightly greased 10-inch deep dish quiche pan. Bake at 350u0b0 for 1 hour. Let stand 10 minutes before cutting.
