Garbage Bread (Stromboli, Or Whatever)
- Dough (for 1):
- 1 cup lukewarm water
- 3 cups King Arthur bread flour
- 1.5 teaspoons each salt & sugar
- 2 teaspoons yeast
- 1/4 cup olive oil
- Italian meat bread:
- 1/2 lb sharp provolone
- 1/2 lb lean ham
- 1/2 lb spicy ham
- 1/4 lb slicing pepperoni
- 1/4 lb peppered salami
- 1/2 lb grated Italian cheeses
- Broccoli bread:
- 1 large head of broccoli steamed and drained
- 2-3 tablespoons Dijon mustard
- 1/2 lb sliced muenster cheese
- 1/2 lb grated cheddar or cheddar jack cheese
- Mushroom bread:
- 2-3 lbs mixed mushrooms (crimini and shitake, cleaned and sliced
- 1 large yellow onion
- 3 tablespoons butter
- 1 tablespoon olive oil
- salt and pepper to taste
- 1/2 lb sliced american cheese
- 1/2 lb grated cheese of choice
- For each dough:
- Add water to bread machine first followed by all of the other dough ingredients. Set machine to knead and rise one time. Oil dough when finished and store in a plastic bag either in the fridge or freezer, depending on when you plan to assemble the bread.
- To assemble breads:
- Roll out dough on an oiled surface to be the length of your cookie sheet and as wide as you can make it. With the exception of the broccoli bread, which you start by spreading the mustard over the rolled out dough, start by laying out the sliced cheese in single rows along the long side of the dough working away from you. Apply your other ingredients as you like keeping in mind that you will roll the dough up from the long side, working away from you. Roll up. Turn under the ends and seal. Seal the long seem well with your fingers and transfer to an oiled foil-lined baking sheet, seam side down. Bake at 375 degree until brown and bubbly (35-45 minutes).
