Ham, Cheese & Hidden Vegetable Muffins
- 1/4 Cup grated zucchini
- 1/4 Cup grated carrot
- 1/4 Cup grated sweet potato
- 1/4 Cup grated pumpkin
- 2 slices of finely diced ham (or any diced meat your toddler will eat!)
- 1 Cup grated tasty cheese
- 1 Tablespoon Parmesan cheese (optional)
- 2 1/2 Cups Self raising flour
- 1 1/2 Cups Milk
- 1/3 Cup vegetable oil (or your preference)
- 1 Egg beaten
- Sift flour into a large bowl and then add all other ingredients listed above and stir with a wooden spoon gently to combine. You don't want to beat the mixture as the muffins will turn out dense and rubbery!
- Grease some mini muffin tins or some normal sized muffin tins (i did a tray of each size) and spoon in mixture until it comes 3/4 of the way to the top of each pan. You may want to sprinkle a little extra grated cheese over the topi do this for Miss Teen but not the toddler twosome as they don't like the texture of melted cheese on top of something (I knowcrazy kids!!).
- Bake in a 180 deg Celsius oven for 15-20 minutes depending on your particular oven type. Stand in the muffin trays to cool for 10 minutes and then transfer to a wire rack.
