Rocky Road Fudge
- 2 cups one 12 ounce bag nestle semisweet morsels
- 1 can sweetened condensed milk, 14 ounces
- 1 teaspoon vanilla extract
- 2 cups mini marshamallows, rounded
- 1 1/2 cups salted coctail peanuts, coarsely chopped, flat, instead do fw salted toasted almonds
- LINE 13 x 9-inch baking pan with foil; grease lightly. MICROWAVE morsels and sweetened condensed milk in large, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir in vanilla extract. Fold in marshmallows and nuts. PRESS mixture into prepared baking pan. Refrigerate until ready to serve. Lift from pan; remove foil. Cut into pieces.
- We preferred in 7 x 11 pyrex dish. (so i decreased marshmallows from 3 cups in orig recipe to 2).
- I did in microwave on 50% power.
- Spread in pan with green spatula, and after 1 hour in fridge i quickly cut, 8 by 4, lifted with med offset and put in containers back in fridge.
- The longer this sets the better. Meaning more than 2 hours, otherwise texture is too soft.
