Athenian Fish / Tilapia With Cucumber Relish
- 1 tsp olive oil
- 4 (6 oz) tilapia fillets
- 1 tsp greek seasoning
- cooking spray
- 1 c. chopped english cucumber
- 1/2 c. prechopped red onion
- 1/2 c. chopped tricolor bell pepper mix
- 2 tbsp chopped fresh oregano
- 1 1/2 tbsp chopped fresh mint
- 2 tbsp orange juice
- 2 tsp white wine vinegar
- 1 tsp honey
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1/2 cup crumbled feta
- 1. Preheat broiler.
- 2. Brush olive oil evenly over fish and sprinkle with greek seasoning. Place fish on the rack of broiler pan coated with cooking spray. Broil 5 in from heat 7 mins or until fish flakes easily when tested with a fork.
- 3. While fish cooks, combine cucumber and remaining 10 ingredients in a small bow, toss well. To serve, spoon relish evenly over each fish field.
