Potato Beef Quick Meal
- 2 lb. ground beef
- 1 c. chopped onion
- 1/4 c. chopped green pepper
- 1 tsp. brown sugar
- dash of cayenne pepper (if desired)
- 1 3/4 c. water
- 1/2 c. chili sauce or ketchup
- 1/2 tsp. Worcestershire sauce
- 1 pkg. Pillsbury au gratin or real cheese sauce scalloped potatoes
- 1 (16 oz.) can tomatoes, cut up (undrained)
- 1/4 to 1/2 c. Mozzarella cheese, shredded
- Heat oven to 350u0b0.
- In large ovenproof skillet, brown beef; drain.
- Add onion, green pepper, brown sugar, cayenne pepper, water, chili sauce, Worcestershire sauce, potato slices, contents of seasoning mix envelope and tomatoes.
- Mix well.
- Bring mixture in skillet to a boil; stir.
- Carefully place skillet in oven. Bake at 350u0b0 for 35 to 45 minutes or until potatoes are tender, stirring occasionally.
- Sprinkle with cheese.
- Bake for an additional 1 to 2 minutes or until cheese is melted.
- Makes 8 (1 cup) servings.
