Shrimp Jamaica
- 1 lb cleaned and shelled shrimp
- 2 tablespoons olive oil
- 1 tsp butter
- 3-4 cloves finely minced garlic
- 2-3 tsp. grated fresh ginger
- pinch of cumin
- pinch of red pepper flakes
- 1 tblsp minced onion
- 2-3 tsp Jamaican curry (other curry will do fine)
- 1 tblsp flour
- shrimp broth
- Using steamer basket, lightly syeam the shrimp - do not totally cook them. Set shrimp aside and reserve the steaming water, now lightly flavored with the shrimp. Heat oil and butter over medium heat in 10 inch heavy skillet. Saute garlic, ginger, cumin, red pepper, onion and curry over medium heat until garlic and onion are lightly golden - about 5 minutes. Add the shrimp and saute a few more minutes, just til shrimp are cooked. Sprinkle flour into the saute and blend well. Add broth, just enough to create a light glaze on the shrimp. Serve immediately over rice or angel hair pasta.
