Roasted Salmon With Couscous

  1. To prepare the salmon:
  2. Place maple syrup, soy sauce, sesame oil, lemon zest and ginger into a zip lock bag .Mix well and add salmon steaks.Place zip lock bag in a bowl and refrigerate 4 hours or overnight.
  3. Preheat oven to 500 degrees F.
  4. Line a shallow pan with heavy duty aluminum foil and spray
  5. with non stick cooking spray.
  6. Place salmon filets on foil and
  7. grate pepper on top. Bake for 10
  8. minutes or until fish flakes.
  9. To prepare the onions:
  10. Heat oil over medium heat in a small saucepan.Add onions and cook for 2 to 3 minutes. Turn heat to low and add vinegar and honey. Cook about 10 minutes until onions are soft. Season with salt and pepper.
  11. To prepare couscous:
  12. Boil stock in a large saucepan.
  13. Remove from heat. Add couscous,
  14. stock, butter and parsley.Stir and cover. Let stand for 10 minutes. Pour onion on top and fluff couscous.
