Vegetarian Supper Combo (Aka That Lentil Thing You Make)

  1. Heat oil in a large skillet over med-high heat, until hot.
  2. Add onion, bell pepper, carrot, rice and lentils; cook and stir 3-4 minutes or until vegetables are crisp-tender.
  3. Stir in remaining ingredients.
  4. Bring to a boil.
  5. Reduce heat to low; cover and simmer 15-20 minutes or until vegetables are tender and liquid is absorbed, stirring occasionally.
