Brocolli Rice & Cheese Cassserole
- 1 stick margarine
- 1 chopped onion
- large bag of frozen chopped broccoli
- 1 tsp salt
- 2 cans cream of mushroom or cream of chicken soup
- 2 1/2 cups milk
- 2 cups (or more) shredded cheddar cheese
- 2 cups minute rice
- Heat oven to 350 degrees F.
- Step 2Saute' together the stick of margarine, chopped onions and frozen broccoli in a large skillet over high heat. As soon as all the ingredients are soft, remove from the heat. Do not scorch.
- Step 3In a large mixing bowl, mix together the saute ingredients, the rice, cheese, soup, and milk. Mix well to get all the ingredients mixed together good.
- Step 4Put that mixture into a 9 x 13 inch baking dish and bake uncovered for 45 minutes. Just to make sure there isn't any boil-over, place a cookie sheet on the rack below your pan in the oven to catch any possible run off. Let stand for a few minutes before serving. Yummy!
