Jellied Coconut Water Consommé With Chocolate Sauce

- Sugartttt60 gm
- Agar-agar leafttt0gm
- Walnut for garnishtt3pc
- Mint sprigtttno

- Method
- Take a bowl put Agar-agar leaf and pour hot water.
- Take sauce pan melt sugar, (do not burn it) add fresh coconut water and bring it to luke warm temperature.
- Add the Agar-agar to the coconut water and set it to cool for at least 3hrs.
- To serve
- Melt the chocolate over double boil, add cream. Pour the chocolate in the center of the plate garnish the plate with little cream
- Take out the coconut jelly from the fridge using two spoon dipped in hot water make a quenelle and place on top of the chocolate sauce garnish the jelly with walnut and sprig of mint
